I made these a while ago for a Valentines Day coffee morning with the girls (back when I was not working full time, oh the freedoms!) They were quite a hit but I decided to update them to make them more therapeutic, like a little dose of nutrition in a chocolate ball - what's not to love?!
They are 60 calories each and amazingly they satisfy the chocolate urge. I find 1 or 2 is enough as they are quite rich.
Cocoa powder x 40gm
Nuts x 125gm (I used walnuts but you could use pecans or almonds)
Dates or dried apricots x 230gm
Hemp seeds x 2 tablespoons
Blend the nuts and cocoa into a fine mix (as this is a dry mix you need a blender with a lid!). Add the dates or dried apricots and blend further to make a paste.
Press the paste into ice cube trays. I used quite small ice cubes and made 30 chocolate nibbles. Freeze for at least 2 hours. Remove from freezer and ice cube trays. Place in freezable containers. Remove serving as required leaving to stand at room temperature for 30 mins before eating.
Eat with friends or loved ones or treat yourself to one with a coffee on a quiet afternoon :)
Cocoa is full of antioxidants. Dates and dried apricots provide the moisture and sweetness without having to use butter and sugar.
